APPLE-CRANBERRY CAKE

Dale Carnegie advised: when life gives you lemons, make lemonade. And even from very sour cranberry we can bake delicious cake 🙂

Ingredients: 3-4 apples, 1 cup of dry or thawed cranberries, 3 eggs, 1 cup of sugar, 1 cup of all-purpose flour, 1 sachet of vanilla sugar or 1 tsp of vanilla extract, 1/2 teaspoon of baking powder. Optional: + 1/2 teaspoon of cinnamon.

Clean apples from cores (and also from skin, if it is too dense or is covered with sticky “protective” composition – it contains harmful substance), cut into thin slices and arrange the slices like a flower in any greased form for baking. Sprinkle with cranberries, put another 1-2 apple layers (depending on the quantity of apples and cranberries, and size of your baking form). For a form in 30-40 cm better take ingredients in double amount. Option: simply cut apples into cubes 🙂

Sift the flour, mix with baking powder (and cinnamon).

Beat eggs with sugar until white, add vanilla, flour and beat for another minute. Pour the batter into a baking dish above apples. Tap the bottom of the form, the dough has gone through all layers of apples. Place in preheated to 350-390 F (180-200 C) oven for 20 minutes. Turn down the oven temperature to 200 F (100 C) and bake another 20 minutes. Check readiness with a toothpick: if it is dry – the cake is ready. This cake can be a bottom-top – choose which side came out more beautiful 🙂
