The custard is a must-have addition to any pudding. With 2 more spoons of a flour and 2 more spoons of corn starch it will be great addition to a trifle!
2 cups of any milk (you can use lactose-free)
4 egg yolks
70 -90 g sugar
1 tbsp vanilla extract or sugar
1-3 tbsp corn starch (or 1-2 tsp potato starch)
1-3 tbsp plain flour (you can use also rice flour (1-2 table spoons) or coconut flour (1-2 table spoons) or any other gluten-free flour what you like. But no savory like garbanzo :))
Heat a milk in a saucepan until it comes just up to the boil, take off the heat. In a bowl, beat together the egg yolks, vanilla and starch. Pour the milk slowly over the egg mix, beating well. Return the mixture to the stove (better on low heat) and stir 8-10 mins until the mixture begins to thicken. For a pudding serve hot or cold, in a trifle put cooled.
