This pudding is baked like a cake, but it is important to help retain moisture. In general, it is very easy to cook and it is delicious.


100 g (1/2-2/3 cup) of dates (pitted)

250 ml (1 cup) of water

60 g (1/4 cup) of butter

2 eggs

120 g (1/2 cup) of brown sugar

1 tsp of vanilla sugar or vanilla extract

1/2 tsp of soda

160 g (2/3 cup) of all-purpose flour

baking powder on tip of a knife.

Sliced dates boil in 1 cup of water until softness, about 5 minutes. Drain and make a puree. Whip softened butter with sugar, add eggs, whisk together. Stir in cooled mashed dates, add flour and other ingredients. Pour the mix in a greased form. Put in an oven, preheated to 200C (390F), bake about 30-40 minutes. While preparing pudding, make Toffee-sauce. For 1 serving:

20 g (1-2 tbsp) butter

20 g (1-2 tbsp) brown sugar

40 ml (2-4 tbsp) of heavy cream or 3 tbsp of milk and 1 tbsp of butter

Mix all and put on a stove. Stir constantly. The longer the mix is cooked, the thicker will be the sauce. But and without the sauce Toffee pudding is very tasty. And after standing overnight in a refrigerator, it is even better 🙂
